When a defender is sent out, I think it would be preferably if:
1. An option is given (such as in Set plays) which player can be best placed in the defence instead of the attacker which is generally the one most lacking tackling, or 2. all players take a step back.

1."Red Cards
When any Player is sent off, the Attacker with the lowest Shirt Number will always move back to cover the sent off Player's position."
2. I am not sure what you mean by "all players take a step back". But if I understand correctly than you can use alternative tactics. you are club member so you can use 2 alternative tactics.

I mean that a midfielder will take a defender position and an attacker will take a midfielder position

That is the way it used to be before with the old sim. Problem is you never knew which attacker or midfielder would move into those positions...thus impossible to set any add rules for subs or alternative tactics without running the risk of a distorted formation once the add rule is executed.
With the new rule you know exactly who is going to move to the position of the sent off player...that is...it will always be the striker with the lowest jersey number. Now it is possible to set add rules (any defender or any midfielder sent off) with subbing in players of comparable midfielder or defender skills immediately at the time of the sent off. Plus you can set alternative tactics without any distortion in formation...that is, holes in the defense.
So as a manager, I am 100% in on the new red card rule.

Why lowest shirt number? Seems stupid. I like to number my players properly, which means that number 9 is a leading striker and number 11 is a winger (therefore, a midfielder in the true definition). In my squad winger is more suitable to drop back.

Lowest number striker might create some inconvenience for some managers...due to their particular means of numbering players but it is what Crew decided to use...it could have been the highest number...either way you will make some managers unhappy.
For my wing tactics...I changed my winger's number to #1 because he would be a perfect fit for either midfielder or defender if they get sent off...thus I don't have to worry about any substitution.
Maybe I am too easy...but I have over the years learned to just adapt to whatever changes are made.
