I think the answers to this question are endless. It will vary with each persons nationality and also age.

Some from my nationality (Indian, in case you do not recognize the flag)

PT Usha coming fourth in the 84 Olympics.
She missed out the bronze by 1/100th of a second.If my memory serves me correct, she would have been the first Indian woman to win a medal at the olympics.

Dhyan Chand in the 1936 Olympics at Munich.
There are many Legends about this. I nicked this from Wikipedia, so they might not be completely true.

After India played its first match in the 1936 Olympics, Dhyan Chand's magical stickwork drew crowds from other venues to the hockey field. A German newspaper carried a banner headline: 'The Olympic complex now has a magic show too.' The next day, there were posters all over Berlin: Visit the hockey stadium to watch the Indian magician Dhyan Chand in action.After seeing his prolific play at the 1936 Berlin Olympics, Adolf Hitler offered Dhyan Chand, a Major in the British Indian Army, German citizenship and an offer to promote him to the rank of a Colonel (which Dhyan Chand refused).

I wouldn't believe these stories as they are legends and they grow in their for lack of a better word, awesomeness as time passes. One fact I can attest to was that the Indian field hockey team refused to salute Hilter. My Grandfather told me this and his father had attended the games.Apparently only the Indian field hockey team and the American contingent refused to do so.

Abhinav Bindra winning the gold medal in the 2008 Beijing Olympics as it was the first individual gold medal won by an Indian.It sparked wild celebrations here in India, celebrations that would have made any first world citizen roll their eyes.But sports has had that effect in India,actually scratch that winning has that effect in India.The wins for India are few and have far too much gap between them.

The Beijing Olympics is the only Olympics in which I did not just follow the Indian contingent.In this Olympic itself I felt there were two memorable International moments:
Usain Bolt blitzing the track records to win the gold, especially with that celebration.
Michael Phelps winning eight gold medals.
