You have to do it manually, like everyone else have to do with their sorting system.
For instance, I sort players by their partial bars. No partials in the attribute they're training = bottom. 75 % partials = top.

It didn't exist before, as players were sorted on their player ID. Although this was usually correlated with their age, there were also exceptions. But I can give you an advice to make it easier to recognize your players. My players' shirt numbers represent their age and position on the field.
18yo: #100-#106/107 (depending on the numbers of players). This way I always know that my 18yo winger is always #106 or #107, the goalkeeper is #100, the target man #105 or #106 etc.
The same goes for:
17yo (#150-#156/157)
16yo (#200-#206/207
23yo (#20-#29)
22yo (#30-39)
...
19yo (#60-69)
This way I always know that my 21yo winger is my highest numbered player between 40 or 49.
